Here is a tasty summer family pasta recipe packed full of flavour, and once the ingredients are prepared the oven does all the work, perfect!
Ingredients List
1 Squash (I use butternut)
1 Red Pepper
200g tomatoes (any variety you like!)
2 tbsp Olive Oil
1 tsp Smoked Paprika
225g Chorizo Sausage
225g Halloumi
400g Pasta (I use Penne)
Instructions for Tasty Summer Family Pasta
- Start by preparing all the ingredients. Peel and chop the butternut squash.
- Slice the peppers and tomatoes.
- Cut up the chorizo into roughly 2cm pieces.
- Preheat the oven to 180 degrees C (fan oven), or 200 degrees C (standard oven).
- Add the olive oil to a large roasting tin. Tip in the vegetables. Add the chorizo. Sprinkle over a tsp of smoked paprika and mix everything together.
- Put in the oven for 25 minutes.
- Cut the halloumi into roughly 2cm chunks.
- Remove roasting tin from the oven. Sprinkle the halloumi pieces over the top of the vegetables and chorizo. Return to the oven for another 10 minutes.
- Put your pasta in a pan of boiling water and cook according to packet instructions.
- When your roasting tin comes out of the oven, stir in the cooked pasta.
- Serve with a lovely salad.

Notes
You can change all the components of this recipe according to what you and your family like. You could change the vegetables to sweet potato, mushrooms or courgettes. You can try any kind of cured sausage, add something a bit spicier if you prefer.
Variations for Tasty Summer Pasta
This is a great versatile recipe. If your family love other vegetables try those. How about courgettes, mushrooms, or sweet potato? You can also change the halloumi for feta, and the chorizo for any other cured sausage.
